I love growing rainbow beets, as there will be a variety of different beets showing up in the garden.
The first harvest this year are red beets and candy striped beets.
The red beets especially are sweet and juicy without the earthy soil taste. Crunchy when eaten raw and yet still retain the crunch when cooked.
